SHIORI 1827
SHIORI 1827 represents the most contemporary and internationally inspired expression of the culinary offering at the Grand Hotel Victoria Concept & Spa, bringing to life a refined dialogue between East and West through the language of cuisine. The name itself captures the deeper essence of the concept: Shiori, meaning “bookmark” in Japanese, evokes a moment worth preserving an experience that leaves a lasting impression and invites one to return. The reference to 1827 recalls a time of cultural openness, when Europe began to look outward with curiosity, embracing the allure of distant worlds and Eastern influences. Led by Chef Suphaphon Saengwong in collaboration with Executive Chef Maichol Morandi, the restaurant presents a dynamic and contemporary Asian fusion cuisine. It interprets traditional Asian techniques through an international lens, enhanced by the use of carefully selected, high-quality ingredients. The result is an evolving culinary journey where creativity and precision exist in perfect balance, turning each dish into an experience that intertwines discovery, memory, and taste.
